Fried Spinach and Prawn Cannelloni

Ingredients

  • Approx time: 64 min

    FILLING
  • 1 L Water
  • 2 tsp Salt
  • 800 g Frozen Spinach
  • 300 g Peeled Prawns
  • 50 g Oil
  • 2 Garlic Cloves
  • 150 g Onion
  • 50 g Toasted Pine Nuts
  • 50 g Raisins (optional)

    SAUCE
  • 200 G Tuna in Oil
  • 400 g Red Capsicum

Method

FILLING

Place water and salt in the jug

Add spinach to the jug, place prawns and capsicum in the steam tray and place it on top of the jug
20 min  |  120°  |  Programme 1

Put the capsicum to one side. Strain the spinach in the steam tray with the prawns and put to one side

Heat up oil

Add garlic and braise
2 min  |  120°  |  Programme Saute

Add onion
5 min  |  120°  |  Programme Saute

Add the cooked spinach and prawns, toasted pine nuts, raisins, salt and programme. Put the filling to one side.

SAUCE

Add tuna and capsicum to the jug
1 min  |  Programme 10

Preheat the oven to 180°. Carefully spoon the filling into the cannelloni tubes and place in an oven proof tray. Cover with the sauce and sprinkle with grated cheese and bake for 25-30 minutes or until cannelloni is soft.
